Sheet Pan Crispy Sesame & Ginger Chicken with Garlicy Green Beans

Looking for an easy and satisfying meal for busy weeknights? Look no further! This recipe is so good and both gluten and dairy free. The chicken and green beans get perfectly roasted in the oven and the sesame & ginger sauce is so flavorful and amazing! Serve over rice for a complete and filling meal.



Ingredients:


Chicken

  • 2 skinless chicken breasts (roughly 8 oz each)

  • 1 egg

  • 1/2 cup corn starch

  • 1/2 cup GF flour (I used Pillsbury GF all purpose flour blend)

  • 1 tbsp olive oil


Green Beans:

  • 1 pack haricot verts

  • 1 tbsp olive oil

  • 1 tbsp fresh minced garlic


Sauce:

  • 1 tbsp sesame oil

  • 1 tbsp minced fresh garlic

  • 1/3 cup soy sauce

  • 1/4 cup honey

  • 2 tbsp ketchup

  • 2 tbsp rice vinegar

  • 1 tsp fresh ginger

  • 1 tsp Siracha

  • 1 tbsp cornstarch + 2 tbsp water


Optional Toppings:

  • 1 tbsp sesame seeds

  • scallions


Directions:


Chicken and Green Beans:

  • Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper.

  • Chop the chicken in about 1 1/2 inch equal pieces and place in a bowl.

  • Whisk the egg and toss it in the bowl so it coats the chicken.

  • In a separate large bowl, whisk the cornstarch and GF flour. Toss the chicken in the cornstarch/GF flour mixtures until all the pieces are thoroughly coasted.

  • Spread the chicken on the baking sheet. Drizzle 1 tbsp olive oil over the chicken (this will help it get crispy up in the oven).

  • Toss the green beans with the remaining 1 tbsp olive oil and minced garlic and spread on the other side of the pan.

  • Bake in the oven for about 30 minutes, flipping the chicken halfway through and slightly shake the green beans so they don't burn on the bottom.


Sauce:

  • While the chicken and green beans are cooking, heat a pan over medium and add in the sesame oil. Add the minced garlic and saute for a minute or two until the garlic is fragrant.

  • Add the soy sauce and honey and whisk the sauce.

  • Stir in the minced ginger, rice vinegar and ketchup, then whisk.

  • Add the Siracha, and whisk until combined.

  • Whisk 1 tbsp of cornstarch with 2 tbsp of water in a small bowl. Add the mixture to the sauce and whisk until the sauce begins to thicken. Once it's at a consistency you like, remove from the heat.


Drizzle the sauce over the chicken and green beans once they come out of the oven. Serve over rice for a full and filling meal. Top with sesame seeds and scallions if you would like and enjoy!
