Salmon Sushi Bowl with Spicy Sesame Sauce

These bowls are so fun. They are super simple and you can add so many different things as toppings. It's a great way to change up your typical salmon recipe and make a fun and satisfying meal. This recipe is naturally gluten free (as long as you use gluten free soy sauce) and dairy free.



Ingredients:


Salmon:

  • 1 lb salmon (cut into 4 pieces)

  • 2 tbsp GF soy sauce

  • 1 tsp white rice vinegar

  • 1 tsp sesame oil

  • 1 tsp jarred minced garlic

  • 1 tsp jarred ginger

  • 1 tsp honey


Bowl:

  • 1 cup cooked brown rice

  • Optional toppings: avocado, English cucumber, mango, carrots, green onions, cilantro, sesame seeds, and lime because it’s what I had readily available, you can also try edamame or shredded Nori!


Sauce:

  • 3 tbsp Mayo

  • 2 tbsp GF soy sauce

  • 1 tbsp tahini

  • 1 tbsp white rice vinegar

  • 1 tsp toasted sesame oil

  • 1 tsp Siracha, add more/less depending on spice preference


Directions:


  1. Line a large baking sheet with tinfoil and lightly oil. Place the salmon skin side down on the baking sheet. Whisk all the other ingredients under “salmon” together and poor over salmon fillets, rub the sauce in on all sides & bake in the oven at 375 degrees F for 15 minutes.

  2. Cook brown rice according to the box or bag directions and spread evenly at the bottom of your bowl.

  3. Mix all of the ingredients under "sauce" together in a small bowl.

  4. Once salmon is done, feel free to serve it whole, or remove the skin from the bottom and use 2 forks to pull the salmon into bite sized pieces.

  5. Arrange the salmon and your toppings of choice in the bowl over the rice.

  6. Top with spicy sesame sauce and enjoy!
