Roasted Garlic Tomato Sauce! You can whip this up and have it all week long over pasta, or add meat to change it up! I made it over homemade gluten free pasta, which I am still perfecting before I post that recipe! ;) (Gluten free & dairy free option!
Ingredients:
1 head roasted garlic
2 tbsp olive oil
1 celery stalk chopped
1 carrot chopped
1/2 white onion chopped
2 28 ounce can crushed tomatoes
1 tbsp Italian seasoning
1 tbsp granulated sugar
1/4 cup Parmesan (if DF use nutritional yeast instead)
2 tbsp butter (omit if DF or use a DF buttery spread)
salt and pepper to taste
fresh basil for topping
Directions:
Chop up all the veggies! If you have a food processor, use it!
Heat olive oil in a pan over medium heat and add chopped veggies. cook until softened and sprinkle with salt and pepper
Add the crushed tomatoes and mix, stir in Italian seasoning and granulated sugar
Add in roasted garlic (I roasted a whole head in tinfoil and peeled it before crushing and adding)
Stir in 1/4 cup grated parmesan
Add 2 tbsp of butter and season with salt and pepper
Tope with more parmesan and fresh chopped basil
