Roasted Beet Hummus

Looking for the perfect colorful Valentine's Day, Easter, or Mother's Day appetizer? Look no further than this delicious and simple Roasted Beet Hummus! It is naturally gluten free and vegan and has the best combination of flavors!



Ingredients:

  • 1 small roasted beet

  • 1 15oz can of chickpeas

  • 2 1/2 tbsp tahini

  • 3 garlic gloves

  • zest and juice of 1 lemon

  • 1/2 tsp coriander

  • salt & pepper to taste

  • 1/4 cup olive oil


Directions:

  1. Start by roasting your beet in an instant pot or oven. You can roast the beets in an instant pot on the pressure cook setting for about 15 minutes or longer depending on the size of your beets. You can also roast them for about 40 minutes in the oven at 400 degrees F.

  2. Once the beet is done and cool enough to handle, peel it and cut in half. Add all of the ingredients into a food processor except the olive oil. Blend until all of the ingredients are combined and it becomes creamy. Keep the food processor running and slowly poor the olive oil in until the hummus is the texture you like.

  3. If you would like, drizzle the hummus with olive oil, lemon zest, and parsley. Serve with various veggies, crackers or bread an enjoy!
