Lemon Butter Garlicy Salmon

I love salmon in all forms, but this is a perfect and simple way to make salmon absolutely delicious and so special. Serve this over potatoes or rice for a fill meal.This recipe serves 3 to 4 people to make sure to share with family and friends.



Ingredients

  • 2 tbsp olive oil

  • 6 pieces of salmon, roughly 4 ounces each

  • salt & pepper to taste

  • 4 garlic cloves sliced (don't mince them because minced will burn)

  • 4 tbsp butter (use DF butter spread for DF option)

  • juice of 1 lemon

  • 1/2 cup Italian parsley, roughly chopped


Directions:

  1. Heat the olive oil in a pan over high heat (you want it to be as hot as possible so it gets a little crispy). Rinse the salmon with cold water and pat dry with a paper towel. Season the salmon lightly with salt & pepper.

  2. Place the salmon in the pan skin side up (you want to hear it sizzle) and cook for 3-4 minutes or until the salmon begins turning a white color on the sides.

  3. Flip the salmon and add in sliced garlic cloves, butter, and lemon juice.

  4. Allow the butter to melt and begin to baste the salmon with the butter (use a spoon to repeatedly lift up the butter mixture and poor over the salmon). Continue cooking for 3 to 4 minutes basting periodically.

  5. Turn off the heat once cooked and garnish with parsley.

  6. Serve immediately (it is the best hot!) and enjoy!
