This easier Korean Beef Taco recipe is so good! It is inspired by one of my favorite taco restaurants in St. Louis, where I grew up. Using ground beef makes the recipe a bit easier. The lettuce topping adds the perfect crunch on top and the sauce adds the best flavor. This is the sauce that I use for almost all of my taco recipes, so make sure to give it a try on them as well. You can also use flour tortillas if you are not gluten free and normal sour cream if you are not dairy free.
Ingredients:
Lettuce topping:
2 cups spring mix
2 tbsp olive oil
1/2 tbsp rice wine vinegar
juice of 1/2 lime
1/2 tbsp sesame seeds
Beef:
1 lb ground beef
1/4 cup brown sugar
1/4 cup GF soy sauce
2 tsp sesame oil
2 tsp minced garlic
1 tsp crushed ginger
1/4 tsp crushed red pepper flakes
Sauce:
1/3 cup mayo
1/4 cup sour cream (I usually use Kite Hill DF sour cream)
1/2 tbsp garlic powder
juice of other half of lime
1 tbsp Siracha (you can use more or less depending on how spicy you want your sauce)
Tacos:
8 GF corn tortillas
optional: green onions or cilantro for topping
Directions:
Start by prepping the lettuce topping by placing the spring mix in a large bowl. In a mason jar or small container, add the olive oil, rice wine vinegar, and lime juice and shake until well combined.
Add the dressing into the spring mix bowl, sprinkle on the sesame seeds, and stir until all the lettuce is coated with the dressing.
Next, break up the ground beef in a large pan and cook until browned, about 5 to 7 minutes. Drain some of the excess fat, but leave a little so the meat does not get dry. In a small bowl, whisk together the brown sugar, GF soy sauce, sesame oil, garlic, ginger, and red pepper flakes.
Stir the mixture into the ground beef and allow to simmer for a few minute so the meat can absorb the sauce flavor.
Prepare the sauce by mixing together the mayo, DF sour cream, garlic powder, half of lime juice, and Siracha in a small bowl.
To assemble the tacos, warm up the tortillas and add in some ground beef. Add the lettuce topping on top followed by a drizzle of the sauce. Top with green onions and cilantro if desired. Serve with extra sauce and Siracha and enjoy!
