In need of something quick to bring to a family event or friends BBQ for the Fourth? Here is a super simple and fun recipe you can make for friends and family last minute! All you need to do is pick up the fruit from the store, cut them up, and throw them on the skewers! I also like serving them with some sweet greek yogurt or dairy free yogurt so people can dip their skewers if they would like! The skewers look a bit like fireworks to me, so I also like sprinkling them with some small sparkly sprinkles. This recipe makes about 10 skewers. You can save them in the fridge overnight, the bananas might just brown a little bit.
Ingredients:
1 small watermelon
2 large bananas
1/2 to 1 pint blueberries
10 large wooden skewers
optional: sweet greek yogurt or dairy free sweet yogurt for dipping, sparkly sprinkles
notes: you'll also need some star shaped cookie cutters. I got mine at Michaels, but you can probably get them at Target or other baking stores.
Directions:
Carefully cut the watermelon in about 1/2 inch slices, long ways, so there is as much red watermelon exposed as possible. Using your star cookie cutters, cut star shapes out of the watermelon slices. For this exact recipe, you'll need 10 small stars and 10 large stars.
Next, peel the bananas and cut them in about 1/2 inch pieces.
Start assembling the skewers. I like to put on 2 blueberries, followed by 1 banana piece, 1 small watermelon star, 2 more blueberries, 1 more banana piece, and finally the large watermelon star on top. You will have to carefully assemble them in order to keep any of the fruit from breaking when you poke the skewer through it. The bananas are extra soft and are the most likely to bread.
Repeat this with the remaining 9 skewers.
I then like to sprinkle the watermelon pieces with a little bit of sparkly sprinkles so they resemble fireworks, but you do not have to do this if you don't want to.
Serve the skewers with the sweet yogurt or dairy free yogurt and enjoy!
Note: You can easily modify this recipe with whatever fruits you would like. If you want to keep it Fourth of July themed, you can replace the watermelon with strawberries. If it is for another occasion, you can use whatever colored fruit you would like!
