Looking for a simple yet satisfying breakfast? Give this breakfast sandwich a try! You can leave the avocado and tomato off if you don't like those for breakfast, but they make it so good! You can also make a few and wrap them up to have later in the week or freeze and have much later!
Ingredients:
2 pieces of bacon
1 tbsp of butter, DF butter, or olive oil
GF toast, bagel, English muffin (whatever you prefer!)
2 eggs
1 cheddar cheese slice or DF cheese slice
Slice of tomato
1/4 of an avocado sliced
Everything but the bagel seasoning from @traderjoes
Directions:
Cook up your bacon in the oven or on the stove.
Spread 1/2 tbsp butter or olive oil on the inner pieces of the bread/muffin/bagel and heat a medium sized pan over medium heat. Toast the bread for about 3 mins on each side and set aside.
Whisk up the eggs in a small bowl and heat the remaining 1/2 tbsp butter or olive oil in the same pan. Move the butter or olive oil around so it covers the whole pan!
Pour in the eggs, allow to start cooking like an omelet, but push in the sides with a spatula and allow the liquid to run to the edge of the pan. This creates a fluffy texture. Once it starts to cook through, flip and cook for 1 minute.
Fold the egg in half twice with the spatula and lay the cheese on top. Pour a couple tbsps of water in the pan & cover for about 2 mins (the water will create a steam that makes the cheese get super melty & yummy!
Remove the cheesy egg and put it on top of the toast.
Sprinkle with everything but the bagel seasoning & top with the cooked bacon, tomato and avocado! Enjoy!
Tips:
You can leave off the avocado or tomato if you don’t like that for breakfast.
The biggest part of this recipe is melting the cheese with the steam, it makes such a difference and is so good!
