I love fresh peaches in the summertime, so decided to create a hot chicken dish that incorporates them. The cilantro lime and Chile flavor goes perfectly with the sweet peaches and honey. It is the perfect combination of sweet and spicy! This recipe is also super simple coming together in 30 minutes or less. It is also naturally gluten and dairy free. I know it sounds like a funny combination of ingredients but I promise that you will not be disappointed with the outcome! I would recommend serving the dish over brown rice for a filling meal.
Ingredients:
1 tsp chili powder
1/2 tsp chipotle chili
1 tsp cumin
1 tsp paprika
1/2 tsp garlic powder
1 tsp salt
1 1/2 tbsp chopped cilantro
1 lb boneless, skinless chicken thighs
2 tbsp olive oil
Juice of 1 lime
2 to 3 ripe peaches
1 tbsp honey
Directions:
Preheat the oven to 425 degrees F.
In a small bowl, mix together the chili powder, chipotle chili, cumin, paprika, garlic powder, salt and chopped cilantro
Place the chicken thighs onto a plate and sprinkle them with the seasoning mixture evenly on both sides. Use your hands or a spoon to make sure the seasoning is evenly coating all of the chicken.
Heat the olive oil is a large, oven proof pan over medium high heat. Place the seasoned chicken thighs into the pan. Cook on the first side for about 3 minutes, flip, and cook on the other side for 2 minutes. You want the chicken to get a little crispy on both sides.
Squeeze the lime juice over the chicken thighs. Place the pan in the 425 degrees F oven for 15 minutes or until the chicken reaches an internal temperature of 160 degrees F.
In the meantime, slice the peaches and prepare the honey. Once the chicken is cooked through, remove the pan from the oven and turn the oven to broil.
Place the sliced peaches evenly in the pan amongst the chicken and drizzle everything with the honey.
Place back in the broiler for about 2 minutes, just until the peaches soften.
Remove from the oven and serve hot over rice and top with more cilantro or lime if desired and enjoy!
Save leftovers in an air tight container in the fridge for up to 3 days.
