Accordion Style Potato Breakfast Sandwich

Accordion to the potato gods, this is the ultimate breakfast sandwich! But seriously, this is SO good! Cutting the potatoes, putting them on the skewers and baking with the seasonings makes the potatoes extra crispy. Then adding the eggs, DF cheese, crispy bacon, avocado, everything but the bagel seasoning, and hot sauce makes them extra special. You can always make the accordion style potatoes and add whatever toppings & sandwich fillings you like, these are just the ones I love! The best part is there is no bread needed, so it is naturally gluten and dairy free!


Ingredients


Accordion Potatoes (makes roughly 6, or 3 sandwiches):

  • 2 Yukon gold potatoes

  • 6 thin wooden skewers

  • 2-3 tbsp olive oil

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp paprika

  • salt & pepper to taste

Sandwich additions:

  • 3 eggs, whatever style you prefer (1 for each sandwich)

  • DF cheese

  • 3 pieces of bacon (1 for each sandwich)

  • Avocado thinly sliced

  • everything but the bagel seasoning from Trader Joes

  • Hot sauce of choice


Method:

  1. Preheat your oven to 400 degrees F. Prepare a large baking sheet by lining it with parchment paper.

  2. Start by chopping the ends off of the potatoes. Stand the potato up on one flat end, and vertically slice down, making each slice about 1/2 inch thick. With two potatoes, you should have roughly 6 solid slices. You can save the ends and scraps of the potatoes for a different dish.

  3. Lay one slice of potato down flat, and place a skewer on each side, length wise. Cut thin lines vertically all along the potato. The skewer will make it so you only cut part way through the potato. Flip it over and cut similar lines, except diagonally this time. Again, use the skewers so you only cut part of the way through. Repeat this process with the remaining potatoes.

  4. Once you have cut the potatoes, when you hold them up, they should look "accordion" like. Carefully slide one of the skewers through each potato, long ways. This was the most challenging part of the whole process, so make sure you go slowly and carefully, as to not poke your hand or butcher the potato.

  5. Once each potato is "skewered" carefully pull apart the potatoes slightly to reveal the accordion look. After you skewer and stretch each potato, place it into a bowl filled with cold water until you are ready to season them.

  6. In a small bowl, mix together the olive oil, garlic powder, onion powder, paprika, salt and pepper until combined. Carefully lay each potato onto the baking sheet and lightly blot with a paper towel to remove the excess moisture. Using a pastry brush or your hands, rub some of the seasoning on both sides of all the potatoes.

  7. Place them in the oven, allowing to bake for about 25 minutes at 400 degrees F.

  8. While you wait for them to cook, you can prepare you eggs as you would like, cook up the bacon, and slice the avocado.

  9. Once the potatoes are done cooking (they should be golden brown and crispy), remove them from the oven. Allow to cool slightly, and then carefully remove the skewers from each potato.

  10. Top one side of a potato with eggs, DF cheese, bacon, avocado, everything but the bagel seasoning and hot sauce if you would like. Top with another potato. Repeat this with the remaining 4 potatoes and enjoy!
