5-Ingredient Pecan Pie Balls

Pecans are my all time favorite nut and I love them is so many dishes. These 5-Ingredient Pecan Pie Balls are the perfect quick and simple but satisfying treat! You can whip them up in less than 15 minutes, and store them to eat as a snack for days after. These Pecan Pie Balls are also naturally vegan, gluten, dairy, and refined sugar free. This recipe should make roughly 12 balls.


There are many different benefits of pecans. They are good for your heart because they contain monounsaturated fats that reduce the risk of heart disease. They can also improve digestion and have anti-inflammatory benefits. They have the potential to boost immunity and help with hair growth. Overall, I love pecans because they are good for you, filling, and super yummy! Sadly pecans are actually toxic to dogs so make sure you don't let your doggo have any!



Ingredients:

  • 1 cup raw pecans

  • 1 cup pitted dates, packed

  • 1/2 tsp vanilla

  • 1 tbsp nut butter of choice (I like almond or cashew for this recipe)

  • 1 tsp flaky salt


Directions:

  1. Prepare a large baking sheet by covering it with parchment paper and set aside. Place the pecans, pitted dates, and vanilla in a food processor.

  2. Process until all of the ingredients are broken down. This may take longer than you would think. Test to see if it's ready by using your hands to try to pack the ingredients into a ball. If it sticks together, then it's ready!

  3. Using a medium sized cookie scoop or spoon, scoop the mixture onto the cookie sheet. You should have roughly 12 scoops. When scooping, use your hands to carefully roll each scoop into a ball.

  4. Once all of the balls are rolled, drizzle the nut butter on top and sprinkle the balls with flaky salt.

  5. After this, I like to refrigerate the balls for about 30 minutes to allow the nut butter to harden, but you can also eat them right away.

  6. Store in an air tight container and enjoy!
