15-Minute Chicken Lettuce Wraps

For day 5 of my 15-minute meals in 15 days are these 15-Minute Chicken Lettuce Wraps. With just 10 ingredients, these wraps are super easy but extra flavorful. In order to make this recipe just 15 minutes, I bought all of the ingredients from the store already pre-made. For example, I used store bought minced garlic, crushed ginger, and chopped onions. Therefore there is really no prep work - all you have to do is measure them and throw them all in the same pan! This meal is also really healthy and a great option if you are trying to change up your average week night meals! It is also gluten and dairy free and serves 3 to 4 people. Leftovers also stay great in the fridge in an air-tight container for 3 to 4 days. I served this dish with store bought Yum Yum sauce which is the perfect touch!



Ingredients:

  • 1 lb ground chicken

  • 1/2 cup already chopped yellow onion

  • 1/4 cup GF soy sauce (I used San-J Tamari)

  • 1/4 cup GF Hoisin sauce or Teriyaki sauce (I used San-J or Lee Kum Kee's GF Hoisin Sauce)

  • 1 tbsp rice wine vinegar

  • 2 tsp store bought minced garlic

  • 1 tbsp store bought crushed or minced ginger

  • 1 8 oz can chopped water-chestnuts

  • 1 head butter lettuce

  • optional: sriracha, yum yum sauce, green onions for topping


Directions:

  1. Heat a large deep pan over medium to high heat. Add in the ground chicken and use a spatula to break it up into pieces and begin to brown it.

  2. Once it is about halfway cooked (about 3 minutes), add in the yellow onion. Continue to cook for another 3 to 5 minutes until the chicken is browned and the onion is soft. Turn the heat on low.

  3. In a small bowl, whisk together the GF soy sauce, GF Hoisin or Teriyaki sauce, rice wine vinegar, garlic, and ginger together. Once the contents are fully combined, poor them over the chicken.

  4. Make sure the water-chestnuts are chopped into small pieces and add them to the chicken. Stir everything together making sure the chicken is completely coated with the sauce mixture.

  5. Allow the chicken to simmer for 1 to 2 more minutes, making sure everything is completely heated through. Serve hot with pieces of butter lettuce. Use the butter lettuce wraps for the chicken.

  6. Top with sriracha, yum yum sauce, and chopped green onions if desired and enjoy!

  7. The chicken can be saved in an air-tight container in the fridge for 3 to 4 days.
