15-Minute Beef Burritos

For day 2 of the 15-minute meals for 15 days is this super easy beef burrito recipe! There are literally 6 ingredients (and it's excellent this way), but you can also add more toppings in your burrito if you would like.


I did two things different in this recipe that I don't normally do for the blog, but it makes the recipe much shorter and easier. For this recipe I used a taco seasoning pack from the grocery store and also used microwaveable rice. I get my microwaveable rice packs from Trader Joes. They are brown rice and take just 3 minutes to cook in the microwave and they are ready to go! I use the frozen rice packs anytime I am feeling lazy (which is often haha!). For this recipe I just heated up the beans and tortillas in the microwave as well because it is quick, but you can really do this any way you want! The gluten free tortillas are challenging to roll into burrito form, so I generally heat them up one by one as they are much easier to roll when they are warm. This might take you a couple extra minutes, but you should be able to have them done in 15 minutes or less!



Ingredients:

  • 1 lb ground beef

  • 1 package, store bought GF taco seasoning mix

  • 1 cup canned refried beans or black beans

  • 3 cups cooked white or brown rice

  • 1 cup DF cheddar style cheese (my favorite is Violife Food's vegan cheddar style shredded cheese)

  • 6 large GF tortillas (my favorite are La Tortilla Factory's GF tortillas, but I sadly didn't have those when making this recipe)

  • Optional: more toppings including sautéed peppers, lettuce, avocado, salsa, DF yogurt or sour cream, chopped onions, hot sauce, etc.


Directions:

  1. Heat a large pan over medium to high heat and add in the ground beef. Break apart the ground beef with a spatula or wooden spoon and cook until browned, about 5 to 7 minutes.

  2. During this time, heat up your cooked rice and beans in the microwave or however you prefer.

  3. Once the ground beef is browned, drain some of the excess fat but not all of it so the meat doesn't dry out.

  4. Add the taco seasoning packet to the beef and add the water amount recommended on the seasoning packet, mix, and allow to heat through for 1 minute.

  5. Heat up your tortillas in the microwave between wet paper towels for about 15 seconds. Since GF tortillas are challenging to roll, I usually heat up each one individually before I wrap them.

  6. Assemble the burritos by adding a couple scoops of the rice, beans, ground beef, and shredded DF cheese. Add any other toppings you would like on top and roll the burrito up.

  7. I like to wrap mine in tinfoil so they keep their shape and store them in the fridge to eat later for 3 to 4 days. Enjoy!
