For day 8 of my 15-minute meals is this 15-Minute Beef and Broccoli. With just 10 ingredients, this beef and broccoli recipe is super simple, but the sauce is extra flavorful. For a full meal, you can serve it over white or brown rice. This recipe is also gluten and dairy free and saves great as leftovers for 3 to 4 days in an air-tight container in the fridge.
Coming up with 15 different 15-minute meals has been pretty challenging but really rewarding! I have been successful with meat based meals or seafood based meals, but I am now working on developing some vegetarian and plant based meals that have few ingredients and take under 15 minutes to prepare. I am also looking to make a couple extra healthy options for those that have that preference.
Ingredients (Makes roughly 3 servings)
2 tbsp olive oil
1 lb thinly raw sliced beef (choose a tender option)
1 small head of broccoli, cut into bite sized pieces
1/4 cup GF Hoisin sauce (I used Lee Kum Kee’s)
1/4 cup GF soy sauce
1 tbsp rice wine vinegar
2 tsp store bought minced garlic
1 tsp store bought crushed ginger
1 tbsp honey
1 tbsp cornstarch
Optional: sliced green onions for topping
Directions
Heat the olive oil in a large pan over medium to high heat. Add in the sliced beef, laying in an even layer in the pan.
Allow to brown on the first side for 1-2 minutes and then flip the beef to the second side.
After about 1 minute on the second side, add in the broccoli pieces and stir to combine.
Cover the pan to allow the broccoli and beef to steam for about 7 minutes. Check on it every couple minutes and stir to make sure nothing burns.
In the meantime, whisk together the GF Hoisin sauce, GF soy sauce, rice wine vinegar, minced garlic, crushed ginger, honey, and cornstarch in a small bowl.
After the broccoli and beef have steamed, add the sauce mixture to the pan. Stir occasionally for about 3 minutes or until the sauce thickens, the broccoli is al dente, and the beef is fully cooked to your liking.
Remove from the heat and top with sliced green onions and serve over rice if you would like and enjoy!
Save leftovers in an air-tight container for 3 to 4 days in the fridge.
